Course 1: Kelaguen Guihan yan Titiyas Harina
A Chamorro dish of raw tuna cured in citrus with coconut, onion, green onion, tomato, chili pepper, and served with coconut milk flatbread.
Course 2: Atulen Elotes yan Panglao
A simple soup of coconut milk and corn with Oregon Dungeness crab and mushroom.
Course 3: Ensalada
A cucumber and mesclun salad in soy sauce vinegar dressing with tangy, spicy pickled papaya, daigo (pickled daikon radish), rokkyo (pickled pearl onion) and toasted hazelnuts.
Course 4: Tininon Katne
Barbecue spare ribs soaked overnight in Chamorro-style marinade and then grilled over charcoal. Served with red rice (white rice flavored and colored with annatto) and Fina'denne (soy sauce, lemon, onion, green onion, tomato and chili pepper).
Course 5: Latiya
Vanilla custard, chiffon cake, shortbread with coconut candy, hazelnuts, and cinnamon.
