Chef Ed definitely has his go-to dishes at fiestas on Guam, and it's always Kelaguen & Barbecue. So here you go! This entirely gluten-free meal begins with a selection of three Kelaguens, each with their own distinctive flavors, served with grilled handmade corn Titiyas (tortilla). The main entrée features island style barbecue spareribs complete with red rice and fina'denne. For dessert, enjoy an island take on classic cheesecake. Come and celebrate life… Biba!

Pickathon, Chef Jason French (owner of Ned Ludd), Kelly Cox from The Original Fare, and Travel Portland are collaborating to put together another year of unique food, music, and drink experiences for this year’s Curation Series. Anyone attending Pickathon can buy a ticket to participate, limited to 75 lucky guests per meal.

Each Curation event lasts an hour and a half from start to finish.  The event starts with appetizers and drinks from our featured bartender. Next, attendees are treated to an intimate performance by the special guest artist followed by an expanded multi-course meal, and ending with hand-selected tunes by one of our DJ’s.

This year we will be adding some twists and turns to make each curation event unique.

On Saturday, June 10, PDX671 (with the help of our friends Kirt & Emma Dye) will host a pop-up dinner at Crisp.

Presenting a nice opportunity to introduce and showcase our island flavors while venturing past what is routinely served at the food cart, the dinner is also a great way to fundraise for our children's schools!

We've donated this dinner as an auction item for St. Rose School, and this will be our 3rd time doing so. Special thanks are extended to Lesa Benton and Pac Star Inc., for contributing the fish that will be the focus of Saturday's dinner.

Course 1: Kelaguen Guihan yan Titiyas Harina
A Chamorro dish of raw tuna cured in citrus with coconut, onion, green onion, tomato, chili pepper, and served with coconut milk flatbread.

Course 2: Atulen Elotes yan Panglao
A simple soup of coconut milk and corn with Oregon Dungeness crab and mushroom.

Course 3: Ensalada
A cucumber and mesclun salad in soy sauce vinegar dressing with tangy, spicy pickled papaya, daigo (pickled daikon radish), rokkyo (pickled pearl onion) and toasted hazelnuts.

Course 4: Tininon Katne
Barbecue spare ribs soaked overnight in Chamorro-style marinade and then grilled over charcoal. Served with red rice (white rice flavored and colored with annatto) and Fina'denne (soy sauce, lemon, onion, green onion, tomato and chili pepper).

Course 5: Latiya
Vanilla custard, chiffon cake, shortbread with coconut candy, hazelnuts, and cinnamon.
