This pop-up will feature an enjoyable selection of Guamanian comfort dishes, thoughtfully put together by Ed Sablan (PDX Six Seven One) and will also introduce complementing breads by Dillon DeBauche (Little T American Baker).

Ed Sablan, a native Chamorro from Guam, moved to Portland in 1993 to attend art college. Finding himself in various kitchen jobs, it soon became clear that he needed to pursue an avenue of expression through food. Sablan opened the successful food cart PDX Six Seven One in 2010 as not only a personal path for expression, but also an outlet for the preservation and presentation of Chamorro food.

Dillon DeBauche was born and raised in Wisconsin. He started working full time in kitchens at 15 and making bread at 18. DeBauche has baked bread in Austin, Sydney, Paris, and Portland. Currently the head baker at Little T American Baker, he spends as much time as possible there, trying things just to see what happens.

Sablan and DeBauche met in Portland in 2004 through a mutual employer. Since following their own paths, they will offer a taste of fruition through their cumulative efforts. In presenting a 6-course meal – highlighted with hints of citrus, peppers, and coconut – this experience will explore the unique yet familiar flavors of Guam. Prepare for a voyage through time and enjoy the warmth of the island.
